I decided to do a Paleo/Whole30 rendition of Martha Stewart’s steak marinade.  Man, this marinade completely tenderized the meat and made the steak so flavourful.  Both my husband Shawn and I are now hooked on this marinade.

RECIPE NUTRITIONAL VALUE

I used Coconut Aminos as a substitution for the soy sauce.  It has so many benefits.  First, Coconut Aminos has the colour and taste of light soy sauce with dramatically reduced sodium.  Derived from the sap of coconut blossoms, this condiment is gluten and soy-free and is also vegan.  A fabulous alternative with just as much flavour, in my opinion.

RECIPE TASTE PROFILE:

The marinade brings out a light saltiness to the steak.   

DIRTY-BIRDY WINE PARTNER (FOR THOSE MAINTAINING A PALEO OR WHOLE30 LIFESTYLE):

With the predominant taste sensation being saltiness, this steak dish complements all red wines, especially those with a backbone of astringency and tannin.  Saltiness softens tanning, bringing harmony to the palate.

RECIPE:

Place all ingredients in a bowl and whisk.

Place steaks in a nonreactive dish, and pour marinade over top.  Cover, and refrigerate for at least 4 hours or overnight.

Ingredients

1/4 cup olive oil

1/4 cup Coconut Aminos

1/4 cup freshly squeezed lemon juice

5 cloves garlic, minced

Instructions

In a bowl combine all ingredients, whisk together.  Place steaks in a nonreactive dish, and pour marinade over top.  Cover, and refrigerate for at least 4 hours or overnight.

Cook steaks as per your own directions.
