PALEO & WHOLE30 BROCCOLI CHOWDER WITH BACON

In maintaining our Paleo & Whole30 lifestyle, we eat a lot of vegetables as often as possible.  But I’m not much of a fan of steamed broccoli, but I absolutely love this Broccoli Chowder with Bacon.  It’s so substantial and packed with depth and roundness of flavour.  Normally broccoli soup doesn’t possess that “umph” of flavour.  But adding the vegan parmesan with its high umami gives this simple soup so much flavour.  It gives you that comfort food satisfaction.

RECIPE NUTRITIONAL VALUE

You don’t need to be a brain scientist to know broccoli is super healthy.  Broccoli is a decent source of fibre and protein.  It also possesses iron, potassium, calcium, selenium and magnesium, as well as the vitamins A, C, E, K and a decent dose of B vitamins including folic acid.  Both the vegan parmesan and Whole30 approved bacon are good sources of protein.

RECIPE TASTE PROFILE

The predominant taste sensations of this chowder are umami and saltiness, due to the bacon and parmesan. 

DIRTY-BIRDY WINE PARTNER (FOR THOSE MAINTAINING A PALEO OR WHOLE30 LIFESTYLE:

This chowder is packed with fattiness from the coconut cream and parmesan as well as umami.  A big, fat white is important here to stand up to the richness and creaminess of this chowder.  Choose a big, fat white wine, such as barrel fermented and aged Chardonnay or California Fume Blanc.

RECIPE:

Add all ingredients to blender except for half bacon and scallions.

Warm up.

Garnish with scallions, bacon, and extra vegan parmesan if desired.

Ingredients

1 head of fresh broccoli

2 cups low sodium or homemade chicken stock

1 cup full fat coconut milk or coconut cream

1 cup Paleo & Whole30 3 minute vegan parmesan*

2 cloves garlic

6 slices of Whole30 approved bacon 

1 scallion, chopped into small pieces

PALEO & WHOLE30 3 MINUTE VEGAN PARMESAN

Instructions

Steam head of broccoli.  Transfer all ingredients except scallions, 3 slices of bacon, and a few florets to the blender.  Puree until smooth.  Transfer back to a pot to head.  Simmer on low until ready to eat.  Add 3 other slices of bacon, cut into pieces, and chopped florets.  To serve, garnish each bowl with scallion and more vegan parmesan if desired.
