PALEO & WHOLE30 CAESAR COB SALAD

PALEO & WHOLE30 SUPER EASY CAESAR DRESSING WITH VEGAN PARMESAN

The Cobb Salad is a PALEO & WHOLE30 dream-come-true.  It’s loaded in protein and vegetables, nutrients and minerals. 

It all began in 1937 when restauranteur Robert Howard Cobb threw a bunch of leftovers in a bowl late one night.  I would bet he was up late sipping wine with family or friends!  Cobb put French dressing on the salad and viola!  The Cobb Salad was born.

I eat a lot of Cobb salads on this PALEO & WHOLE30 journey of mine.  I like to mix up the ingredients to get different forms of nutrients and minerals from the vegetables and protein.  I also like to use different salad dressings.  In this recipe I use my super asy Caesar Salad dressing.

RECIPE NUTRITIONAL VALUE:

This PALEO & WHOLE30 salad dressing is loaded in monounsaturated fats from the ground almonds and olive oil.  So healthy.  The fat in almonds and olive oil helps to burn fat, all the while improving our heart, brain, and liver health.  Add a little MCT oil to the dressing for additional fat burning and brain-healthy qualities!

The proteins in this salad are the important building blocks of bones, muscles, cartilage, skin, and blood. The vegetables you choose to incorporate will also add specific nutrients, vitamins, and minerals.

RECIPE TASTE PROFILE: 

The predominant taste sensations of this salad are tanginess from the tomatoes, saltiness from the bacon and dressing, and umami from the dressing and proteins.  The mouthfeel is creamy from the avocado, as well as the dressing.

DIRTY-BIRDY WINE PARTNER (FOR THOSE MAINTAINING A PALEO & WHOLE30 LIFESTYLE:

With the tanginess, saltiness, and umami being the predominant building blocks, choose a full-bodied white wine to stand up to the proteins and dressing or a light, fruity red wine that has enough weight and complexity to stand up to the same elements.  A creamy Chardonnay or Pinot Noir (chilled for about a half-hour in the refrigerator) will do the trick!

Ingredients

2 heads romaine lettuce

1 yellow pepper, seeded and julienned

1 cup cherry tomatoes, cut in half

4 green onions, chopped

4 white mushrooms, sliced

2 avocados, sliced

4 hard-boiled eggs, sliced

2 cups cooked chicken, white or dark

8 slices bacon, chopped

Set out 4 bowls.  In each bowl add lettuce and arrange 1/4 of yellow pepper, a few sliced cherry tomatoes, 1 chopped green onion, 1 sliced mushroom, 1/4 of avocado, 1 hard-boiled egg, a hand full of cooked chicken and 2 slices of chopped bacon.  Drizzle in dressing and serve cold or at room temperature.
