PALEO & WHOLE30 WATERMELON SALAD

I’m truly addicted to watermelon in the summer.  It’s one of the only fruits I feel good about eating since I try to keep my sugar intake relatively low in grams per day.  But this fruit is so refreshing and hydrating, especially after working out that I consume in volume without feeling guilty.  And it’s so lovely to look at with its colourful pink flesh!

RECIPE TASTE PROFILE

This simple salad has so much flavour going on.  First, we have the sweetness from the watermelon.   This contrast so well with the saltiness of Greek feta.  Greek feta has both tanginess and saltiness.  The tanginess of this cheese also contrasts nicely with the watermelon sweetness.  Then we have the crunchiness from the English cucumber.  The mint offers this lovely herbal note on the back palate after you swallow a mouthful of this summer salad.  So we have the softness of the watermelon against the toughness of the feta and crunchiness of the cucumber.  We have the sweetness of the watermelon offsetting the saltiness and tanginess of the feta.  A wonderful explosion of tastes and flavours. 

DIRTY-BIRDY WINE PARTNER (For those following a dirty-Paleo or Dirty-whole20 lifestyle)  

The predominant taste sensation of this salad is sweetness due to the watermelon.  The feta offers saltiness.  We need a wine that has both sweetness to match the watermelon and acidity to nicely offset all this saltiness.  I suggest a crisp sparkling off-dry rose.  Off-dry rose has that hint of sweetness as well as a good backbone of acidity.  In the summer, sit on the deck or the porch and enjoy a glass of sparkling off-dry rose in a flute glass alongside a chilled bowl of this delish watermelon salad! Devine!

Ingredients

4 cups cubed seedless watermelon

1 English cucumber, sliced

1 cup cubed Greek Feta (about 100 grams) (For dirty-Paleo lovers)

2 tablespoons minced fresh mint

¼ cup extra virgin olive oil

Pinch sea salt

Freshly ground pepper to taste

Instructions

In a large bowl, gently fold together watermelon, cucumbers, and feta.  Drizzle with olive oil.  Season with salt and pepper.  Pour over salad and toss to coat. Serve immediately or refrigerate, covered, up to 2 hours before serving.
