PALEO & WHOLE30 SUPER EASY CAESAR DRESSING

I can say that I’m totally addicted to Caesar salad dressing and I have been for years.  In my 20’s when I used to eat wheat, I would order almost every day and Caesar salad and a toasted bagel.  I would top the bagel with salad and bite into it.  So delicious.  Nowadays I enjoy the salad without the bagel!  I like putting this quick and easy dressing on all kinds of salads.  It’s my “go-to” dressing that my husband and I eat every week on a salad.  I’m probably as addicted to garlic as I am to this dressing. So add more garlic if you desire!

 

RECIPE NUTRITIONAL VALUE:

This dressing is super delicious and healthy.  The vegan parmesan offers a good dose of protein due to the almond.   The garlic is also extremely healthy.  By chopping the garlic, you release its enzyme called alliinase that catalyzes the formation of allicin.  Allicin then breaks down to form a variety of healthful organosulfur compounds. Allicin reduces inflammation and is high in antioxidants.  Super healthy.

 

RECIPE TASTE PROFILE:

This dressing is loaded with umami due to the vegan parmesan (nutritional yeast), some saltiness, and loads of garlic.

 

DIRTY-BIRDY WINE PARTNER (FOR THOSE MAINTAINING A PALEO OR WHOLE30 LIFESTYLE:

The predominant taste sensations of this dressing are saltiness (added) and umami (vegan parmesan).  Choose a big, bold white or red to match.  The saltiness will offset a white wine’s acidity bringing harmony to the palate.  This same saltiness will tame the tannin and astringency in red, making it smooooooth!

RECIPE:

Get your ingredients ready.

Transfer all ingredients to food processor, blender, or magic bullet.

Puree until smooth.  Transfer to a dish.  Cover and refrigerate until needed.

Ingredients

2 cloves garlic, chopped

½ cup olive oil

½ cup vegan parmesan*

1 tablespoon freshly squeezed lemon juice

2 egg yolks

Sea salt to taste (optional)

Freshly ground black pepper to taste

Instructions

In a food processor, blender, or magic bullet add all ingredients.  Blend until creamy.

Transfer to a clean bowl. Cover and refrigerate until needed.  If the dressing is too thick, add water, a little at a time to your desired consistency.
